Handwritten Heritage
Tolomba is a decadent Armenian dessert that is often paired with tea. This staple dessert is made of fried dough soaked in sweet syrup, similar to choux pastry. During my grandmother's early years in America, she would make and sell Tolomba to make ends meet.
Ingredients:
-3 Cups water (boiled)
-1 Armenian coffee cup of oil
-1 Tablespoon sugar
-3 Cups flour
-7 eggs
-Vegetable/Avocado Oil (frying oil)
Directions:
Pour the water into a pot and allow the water to boil. While mixing, slowly add the sugar, oil, and flour on low heat. Stir until no clumps remain, then add in each of the eggs one by one and mix. The dough is now ready to be placed into piping bags and piped into hot oil until golden brown. Then, take the Tolombas out and directly into a bath of simple syrup. Leave the Tolomba in the simple syrup for 10 minutes, then place onto a rack for the excess syrup to drain out.
