Handwritten Heritage
Sarma is one of my favorite vegetarian Armenian dishes, that is often found in Middle Eastern cuisine.
Ingredients:
-2 White onions
-2 1/2 Cups of Cal-Rose rice
-1/2 Cup #1 Bulgar
-2 Tablespoons Pepper Paste
-1 Whole bunch of dill
-Salt
-Pepper
-Lemon Juice
-Grape Leaves
Instructions:
Dice the onions and sauté them in a pan with oil. Pour the sautéed onions into a bowl with the uncooked rice, bulgur, pepper paste, chopped dill, lemon juice, salt, and pepper. Mix well with hands to ensure all ingredients are incorporated. Rinse the grape leaves and prepare a cutting board. Cut off the stems of the grape leaves, spread the grape leaves onto the cutting board with the back of the leaf facing up. Put a spoonful of the mixture onto the base of the leaf. Then fold in the right and left sides of the leaf onto the center, and roll down the base of the leaf until the sarma shape is achieved.
