My nana Rebeka's Rulet cake is simple but delicious and can be prepared in under an hour. The Rulet cake is known for its soft sponge and sweet jam. My grandma saved this recipe from her village in Ardashat Armenia.


Ingredients:

1 Can of Condensed Milk

2 Eggs

1 Tablespoon White Vinegar

1/2 Teaspoon Baking Soda

1 Cup Flour

Choice of Jam (Preferably Apricot)

Parchment Paper

Powdered Sugar (Optional)




Instructions:

Pour the can of condensed milk into a bowl, then combine it with the eggs and white vinegar (my nana would do this with a fork). Once the ingredients have been homogenized, add the flour and baking soda, and continue to mix until you achieve a runny batter. Place parchment paper on a flat pan, pour the batter into the pan and onto the parchment paper, and place in the oven to cook for 10 minutes or until the cake becomes golden brown. After ten minutes remove the cake from the oven, and immediately using the parchment paper roll the cake into the iconic roll shape. The purpose of this is to maintain the shape of the cake and be able to spread the jam without the jam melting. Allow the cake to cool in the shape of the roll, then gently unroll it (as much as possible) and evenly spread the jam on the cake. Then reroll the Rulet, sift powder sugar on top, and enjoy!
