Lentil Kyofta Ոսպով Քուֆթա

Ոսպով Քուֆթա is a traditional staple dish dish in Armenian culture, that is also quite simple to prepare. This recipe is my nana Susan's staple dish.



Ingredients:

3 Cups of Water

1 Cup of Red Lentils

1 Cup of Bulgur No.1

5 Large Onions

Oil

Salt

Black Pepper

Cumin


Instructions:

Before beginning, wash the lentils and place them into a pot with the water. Once the water boils, lower the heat and allow the rest of the water to evaporate. After the water has evaporated, add the bulgur and mix well. Add salt, black pepper, and cumin to your preference (my nana eyeballs these). Finely mince all the onions, then place in a separate pan to sauté with a generous amount of oil. Once the onions are sautéed mix about half the mixture into the lentils, and reserve the other half to enjoy on the side. Then using your palm shape the Ոսպով Քուֆթա into the shape of an oval. Serve then enjoy with the sauteed onions.
